The nose expresses notes of pear, quince, and green apple. On the palate, the attack is lively, bringing a sensation of freshness! It is a dry white wine with yellow fruit aromas and an enticing aromatic profile.

• Pressed/cooked cheese platter - Gouda, Comté, Mimolette, Beaufort accompanied by dried fruits and dried apricots

Blend: Souvignier Gris 65%, Chenin Blanc 30%, Muscaris 5%

Vineyard area: 16 hectares

Soil type: Deep gravel on limestone marls

Planting density: 10,000 feet / hectare

Vinification: Traditional in concrete and wooden vats proportional to the plot

Aging: in barrels for 18 months, including 40% new barrels

Vintage description: The winter of 2010 was cold and dry. A hot spring allowed for rapid and homogeneous bud break. Cabernet flowering was also rapid with ideal weather. However, a rainy period led to coulure in the Merlots. Veraison was then very rapid and maturation was long and regular. Finally, the grapes were harvested in ideal weather conditions and at optimal maturity. The maturity levels reached approaching harvest time testify to the exceptional climatic conditions enjoyed by the 2010 vintage, which clearly ranks among the great reference vintages (2000, 2005, and 2009). The wine is very colorful, powerful with excellent acid/alcohol/tannin balance. The maturity is exceptional, especially in terms of tannin accumulation, sugars, and aromatic freshness.
